“Gold Ingot” Pork Wantan Soup

During CNY, when you have too much to eat, day and night you will have lots of meaty dishes. Usually on the 3rd day onwards, I will opt for something simple, light and soupy.Every year I will prepare pork wantan soup on the day I host for CNY open house for the family and relatives. Usually I will prepare quite a lot of wantan and to be eaten with the steamboat hot pot I prepared during CNY.

As I told hubby, the stall that sell all the ingredients for steamboat is not open for business the whole entire week. Hence, making wantan is the best to substitute with the fresh ‘sai tou’ fishballs. My dad made the best wantan I’ve ever tasted and his secret ingredient is he added some fish powder ( pin yue powder ) into the minced pork.

There are many ways of wrapping wantan. For this CNY, I am wrapping my wantan in gold ingot shape. These popular symbols of prosperity is widely used as decoration at home during CNY. I wish that the year of SNAKE will bring us prosper and fortune, good health and good wealth to the entire family.

I am starting to get busier and busier each day preparing for CNY. Till then, “huat ah, huat ah, huat ah”.

Ingredients :
300gm minced pork ,make sure to have some fat pork meat in it
1 egg
1 tbsp cornflour
1 tbsp water
6 pcs water chestnut, peeled and chopped into small chunks
1 spring onion, chopped into small pieces
Salt, pepper and sesame oil to taste
Some wantan skin wrappers
Fried shallots and some coriander leaves for garnishing

Method :
1. In a big bowl mix the minced pork, water chestnut, egg, spring onions, cornflour and water together.
2. Then season the meat with salt, pepper and sesame oil to taste.
3. Take a piece of wantan skin wrapper and scoop a heap teaspoon of pork filling on the wantan wrapper.
4. Wrap the wantan as per desired shape.

Soup Base Ingredients :
A handful of anchovies / ikan bilis
1 liter water
Salt & pepper to taste

Method :
1. Bring the water to boil in a pot.
2. Add in anchovies and let it boil for about 30 mins. Then season with salt and pepper.
3. Remove the anchovies from the water and add in wrapped ‘gold ingot’ wantan into the soup base.
4. Let it boil for about 5 minutes or till the wantan is cook.
5. Scoop the wantan soup in a bowl and garnish with fried shallots and coriander leaves or spring onions.
I wrapped mine into gold ingot shape. A step by step pictorial as shown below.
