Mini CNY Butter Cupcakes

My plan to bake a batch of butter cupcakes for 1st day of CNY didn’t take off. The timing this year is not so right. I worked till Friday and Saturday is the eve of CNY whereby I am super busy cooking at home. Then Sunday is the 1st day of CNY. I can’t even find some time to slot in to bake a batch of butter cupcakes for the cousins at home. So got to disappoint them again.

That batch of cupcakes I only baked on the eve’s of Pai Ti Kong day. As usual I will bake something for prayers on that night in my Ah Mah’s house in Kajang. This year I only baked a batch of butter cupcakes and a tray of yam cake for prayers.  Did something simple this year. No fondant decoration as it is quite time consuming. Before CNY, came across a candy stall in the night market and found those mini chocolate in the shape of gold ingot. They are selling at RM5.00 for 100gm. I bought a 100gm of it. Then came across a cute Chinese girl figurine made from royal icing. Also selling at the same price. Apart from that they also came in animals figurine like cow, chicken, sheep but too bad they don’t have snake. I bought all the Chinese girl figurines and it will be nice as cupcakes toppers.

My aunt always complaint that the cupcakes I baked is sweet and she is referring to the butter cream I used to cover the cupcakes. Hence, this year I am cutting down on butter cream and just use a small dab of it to stick on the cute mini toppers. My kids told me the toppers are so cute and they wouldn’t want to eat it. Hahaha… I must agree with them the toppers are really cute. A good buy from the candy stall in the night market. Next year I am going to hunt for it again.

I am using my standard butter cake recipe for the cupcakes. Recipe can be found HERE.

Ingredients:
250gm butter
200gm castor sugar
200gm self raising flour,sifted
6 eggs
4 tbsp milk
1 tsp vanilla essence

Method :
1. Cream butter and castor sugar till creamy and fluffy. Add in vanilla essence and beat again.
2. Add in the eggs one at a time and beat till it well blended.
3. Fold in the flour and alternate it with milk.
4. Pour batter about 2/3 into cupcakes casing.
6. Bake at 180 DC for 20 minutes or till the cupcakes is done.

Last Sunday marked the last day of CNY. We had a wet Chap Goh Meh this year. Its been raining cats and dogs that night. Kids wanted to light off the red firecrackers at home after their dinner. But then its raining quite heavily. I told them we will just keep it for next CNY. Well, time flies. Everything is back to normal. Back to work. Back to school. The only thing we look forward to is our cousin wedding and next family trip in March’13.
